Ingredients

1 lb. link sausage, chopped
2 boneless chicken breasts, chopped
2 qt. water
2 c. dried peas or beans
2 c. chicken stock
1 (28 oz.) can tomatoes
1 can chick peas
1/2 c. red wine
2 onions, chopped
4 stalks celery, chopped
2 cloves garlic, minced
1 bag bouquet garni
1/2 c. parsley
Preparation

Simmer dried peas or beans in water and chicken stock with Bouquet garni for 2 1/2 to 3 hours in a large pot, covered.
Add can of tomatoes, onions, celery and garlic.
Simmer 1 1/2 hours more, covered.
Add sausage and chicken.
Simmer 30 to 40 minutes. Add wine, parsley and chick peas.
Makes 4 quarts.
Freezes well.
