Zucchini Relish - cooking recipe
Ingredients

10 c. ground zucchini
4 c. ground onion
5 Tbsp. salt
2 green peppers
1 red pepper
4 1/2 c. sugar
1 tsp. dry mustard
2 tsp. celery seed
1 tsp. nutmeg
1 tsp. turmeric
1/2 tsp. black pepper
1 Tbsp. cornstarch
2 1/2 c. vinegar (brown)
Preparation

Mix zucchini, onion and salt.
Let stand overnight.
Rinse in cold water and drain in the morning.
Next day, mix green and red peppers, vinegar, sugar, mustard, celery seed, nutmeg, turmeric, black pepper and cornstarch.
Mix together with zucchini.
Cook 30 minutes.
Seal in jars.
May add green food coloring.
Gives a better looking relish.
