Country Captain Chicken - cooking recipe

Ingredients
    2 to 3 lb. chicken pieces
    1/2 c. flour
    1 tsp. salt
    1/2 tsp. paprika
    1/4 tsp. red pepper
    1/2 c. shortening
    1 c. onion, chopped
    1 c. hot water
    1 (1 lb. 4 oz.) can tomatoes
    1 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. thyme
    1/2 c. sliced almonds
Preparation
    Mix flour, salt, paprika and pepper and coat chicken.
    Brown in shortening.
    Remove chicken and reserve drippings.
    Add the onion, hot water, tomatoes, salt and pepper, thyme and sliced almonds.
    Replace chicken in mixture and simmer for 1 hour or until chicken is tender.
    Serve over rice, if desired.
