Grandma'S Potato-Rice Souffle - cooking recipe

Ingredients
    1/4 lb. Carolina rice (measure uncooked)
    3/4 lb. mashed potatoes (3 medium)
    1 lb. Ricotta cheese
    1/2 lb. Mozzarella, chopped
    3 eggs
    2 Tbsp. grated cheese
    1 tsp. parsley
    1/2 stick melted butter
    salt and pepper to taste
Preparation
    Prepare mashed potatoes.
    Prepare Carolina rice.
    Mix all ingredients well in large bowl.
    Pour in large souffle dish/pan. Preheat oven to 400\u00b0.
    Cook for approximately 40 minutes or until top light golden brown.
    Serve as appetizer or side dish.
