Chicken Benzoni - cooking recipe

Ingredients
    thin cut chicken cutlets
    1 pkg. fresh mushrooms
    1 medium onion
    1 can chicken broth
    1/2 lb. Muenster cheese
    olive oil
    margarine
    Italian bread crumbs
Preparation
    Heat oven to 350\u00b0.
    Coat bottom of casserole with olive oil and 2 to 3 tablespoons of margarine.
    Place in oven until margarine melts.
    Bread cutlets with crumbs and arrange in casserole.
    Slice mushrooms and dice onion and spread over cutlets.
    Pour chicken broth over cutlets.
    Bake at 350\u00b0 for 30 to 40 minutes (depending on thickness of cutlets).
    Lay slices of cheese over entire casserole and bake 10 minutes until cheese melts.
    Easy one-dish casserole that also freezes well.
