Potato Soup - cooking recipe
Ingredients

2 c. diced potatoes
1 small onion, diced
3 c. water
3 Tbsp. butter or margarine
3 Tbsp. plain flour
1 Tbsp. salt
1 1/2 c. milk
pepper to taste
Preparation

Cook potatoes and onion in 3 cups water until done.
Drain and save 1 1/2 cups liquid.
Melt butter; add flour and salt.
Mix well.
Slowly add milk and reserved potato liquid.
Stir constantly over medium heat until mixture thickens.
Add pepper to taste.
Add potatoes and onions into liquid mixture.
Let simmer 20 minutes.
Yields 4 to 6 servings.
