Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant, peeled and crushed
    1/2 c. sliced celery
    1 tsp. salt
    1 can mushroom soup, undiluted
    1 small can pimentos, chopped
    2 eggs, boiled and chopped
    bread crumbs
    1/4 c. chopped onion
    1/2 tsp. pepper
    2 eggs, slightly beaten
    1 small can mushrooms
    8 oz. grated cheese
Preparation
    Cook eggplant, celery, onion, salt and pepper in a small amount of water.
    Drain and mash.
    Add remaining ingredients. Pour into greased 1 1/2-quart casserole.
    Top with bread crumbs. Bake at 375\u00b0 for 20 minutes.
