Diabetic Casserole - cooking recipe

Ingredients
    1 1/2 lb. ground beef
    1 c. sliced onions
    1 c. chopped green pepper
    2 tsp. salt
    1 large potato
    1 c. carrots
    1/2 c. long grain rice
    1 (28 oz.) can tomatoes
Preparation
    Saute beef, onion and peppers until brown.
    Drain off fat. Alternate layers of beef, sliced potatoes, carrots and rice.
    Pour smashed tomatoes over the top.
    Cover and bake at 350\u00b0 for 2 hours.
