Panzarella - cooking recipe

Ingredients
    4 c. presoaked toasted steel cut oatmeal
    2 c. cored, chopped tomatoes
    1/2 c. diced red onion
    1/2 c. sliced celery
    1/2 c. sliced basil leaves
    1/2 c. sliced pitted green olives
    1 Tbsp. minced garlic
    1/2 c. olive oil
    2 Tbsp. red wine vinegar
    salt and fresh pepper
Preparation
    Combine all ingredients and allow to sit at room temperature for 30 or more minutes.
    Serve on leafy lettuce with crusty bread.
