Upside-Down Cake(Diabetic) - cooking recipe

Ingredients
    2 c. red tart cherries or other fruit
    2 Tbsp. margarine
    1/4 c. sugar
    1 egg
    1 1/4 c. flour, sifted
    2 tsp. baking powder
    1/4 tsp. salt
    1/2 c. milk
    1/4 tsp. almond extract
    1 tsp. Sucaryl solution
Preparation
    Drain cherries (or fruit) and save juice for Cherry Sauce. Spread cherries over bottom of greased shallow loaf pan.
    Cream margarine with sugar.
    Add egg and beat well.
    Mix and sift flour, baking powder and salt; add alternately with milk to first mixture. Add flavoring and Sucaryl solution.
    Pour over cherries and bake. Serve warm with Cherry Sauce.
