Snow Peas Oriental - cooking recipe

Ingredients
    vegetable cooking spray
    1 tsp. light sesame oil
    1/2 c. canned (no salt) chicken broth (undiluted) or broth from chicken
    1 tsp. low sodium soy sauce
    1/2 lb. fresh pea pods, trimmed or frozen
    1/2 c. diagonally sliced carrots
    1 tsp. cornstarch
    1/4 c. sliced water chestnuts
Preparation
    Coat a nonstick skillet with cooking spray.
    Add oil; place over medium-high heat until hot.
    Add snow peas and carrots.
    Saute 2 minutes.
    Add water chestnuts and broth and bring to a boil. Cover and reduce heat and simmer for 5 minutes or until crisp-tender.
    Combine soy sauce and cornstarch, stirring until cornstarch dissolves.
    Add to vegetable mixture.
    Cook over medium heat, stirring constantly until sauce thickens.
    Serves 4. Serve immediately.
