Skillet Chicken And Potatoes(Makes 2 Large Servings; Low-Fat) - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    10 oz. (about 3 medium) potatoes, thinly sliced
    6 oz. ground chicken or turkey
    1 Tbsp. oleo
    1/2 c. each: diced onion, green pepper and sliced carrots
    1 small clove garlic, minced
    1 (16 oz.) can chopped tomatoes
    1 tsp. parsley
    1/4 tsp. each: thyme, salt and pepper
Preparation
    In a 10-inch skillet, heat oil.
    Add the potatoes and ground meat and cook over medium heat, stirring constantly, until lightly browned.
    Transfer to a plate and set aside.
