Greek Olives - cooking recipe

Ingredients
    fresh olives
    olive oil
    salt
    apple cider vinegar
    fresh garlic cloves, cleaned
    oregano (imported from Greece)
    lemons, sliced into 8 wedges
Preparation
    Slit olives 3 times lengthwise.
    Soak olives in cold water to remove bitterness.
    Change water daily.
    (Let soak until you can eat one.
    Some bitterness will remain.)
    Next, soak olives in brine for 3 days, being sure to saturate water with salt.
    Drain olives, saving brine.
    Place olives into large vat.
    Throw in a generous amount of oregano and pour in enough olive oil to saturate them as you turn them over and over and over.
    Have jars ready.
