French Bread - cooking recipe

Ingredients
    7 to 7 1/4 c. all-purpose flour
    2 pkg. active dry yeast
    2 1/2 c. water
    1 Tbsp. sugar
    1 Tbsp. salt
    1 Tbsp. shortening
    1 egg white and 1 Tbsp. water
    cornmeal
Preparation
    In large mixer bowl, combine 3 cups of the flour and the yeast.
    Heat 2 1/2 cups water, sugar, 1 tablespoon salt and shortening just until warm (115\u00b0 to 120\u00b0), stirring constantly to melt shortening.
    Add to dry mixture.
    Beat at low speed with electric mixer for 1/2 minute, scraping bowl.
    Beat 3 minutes at high speed.
    By hand, stir in enough remaining flour to make a soft dough.
