Lancashire Hot Pie - cooking recipe

Ingredients
    1 1/2 lb. potatoes
    1 1/2 lb. lamb shoulder or other cut
    1 large onion
    1 sliced carrot (optional)
    1/4 pt. stock or water
    seasoning
Preparation
    Slice potatoes.
    Arrange a layer on bottom of casserole dish. Cut meat into pieces (as for stew) and place over potatoes.
    Add sliced onion, carrot and stock.
    Add seasoning; cover with remainder of sliced potatoes.
    Cover and bake at 375\u00b0 for 2 hours. Remove cover last 15 minutes to brown potatoes.
