Chili Skillet - cooking recipe

Ingredients
    1 lb. ground chuck
    1 c. chopped onion
    1/2 bell pepper, chopped
    1 garlic clove, minced
    1 c. tomato juice
    1 can Trappey's pinto beans (undrained)
    1/2 c. uncooked long grain rice
    4 tsp. chili powder
    1 tsp. dried oregano
    1 tsp. salt
    1 can Mexicorn
    1/2 c. sliced ripe olives
    1 pkg. shredded cheese
Preparation
    In a large skillet over medium heat, cook ground chuck until brown; drain. Add onion, green pepper and garlic. Add tomato juice, beans, rice, chili powder, oregano and salt. Cover and simmer for 25 minutes or until rice is tender. Stir in corn and olives; cover and cook 5 minutes. Sprinkle with cheese. Cook, covered, until cheese is melted.
