Carrot Bran Muffins - cooking recipe

Ingredients
    1 c. bran flakes
    3/4 c. milk
    2 c. carrots, finely grated
    1 c. whole wheat flour
    1 c. light brown sugar, firmly packed
    2 Tbsp. canola oil
    1 Tbsp. lemon juice
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. cinnamon
    1/4 tsp. salt
    2 eggs, slightly beaten
    1/2 c. roasted peanuts, chopped
    Pam spray
Preparation
    Combine all ingredients and stir until completely moistened. Spray muffin pan with Pam.
    Fill 1/2 to 2/3 with mixture.
    Bake at 400\u00b0 for 15 minutes or until tester comes out clean.
    Yields 12 to 14 muffins.
