Irish Potato Stew - cooking recipe

Ingredients
    1/2 lb. beef stew meat
    1 medium onion
    2 to 3 carrots
    5 lb. potatoes
    salt and pepper to taste
    parsley to taste
Preparation
    Brown cubes in kettle.
    Add about 7 cups water.
    Bring to a boil.
    Remove scum; add 2 teaspoons salt, chopped onion, cut carrots, quartered, peeled potatoes and fresh or dried parsley. Cover and simmer 2 to 3 hours.
    Remove meat and shred.
    Mash the potato and carrots.
    Place back into the kettle.
