Sweet Potato Cake - cooking recipe

Ingredients

3 c. self-rising flour
2 tsp. vanilla
3/4 c. coconut
1 small can crushed pineapple
2 c. sweet potatoes, grated
2 c. sugar
1 1/2 c. cooking oil
3 eggs

Preparation

Mix oil and sugar; add egg yolks, flour, vanilla, pineapple (with juice), coconut and sweet potatoes. Beat well. Beat egg whites from icing and add to batter last.
