Green Salad With Great Dressing - cooking recipe
Ingredients

1 Tbsp. Dijon-style mustard
3 Tbsp. vinegar (balsamic is good)
1 tsp. minced shallot
1 tsp. sugar
dash of salt
1/2 c. light olive oil
1 head Boston lettuce
1/4 c. hazelnuts, toasted, husked and chopped or other nuts (optional)
up to 1 c. (about 6 oz.) crumbled Stilton or Blue cheese
coarsely ground black pepper
Preparation

For Dressing:
Whisk or use blender or Cuisinart to mix the mustard, vinegar, shallot, sugar and salt.
Add oil slowly, mixing constantly, until thick and creamy.
(You can reduce the amount of oil and substitute water or plain yogurt for approximately 1/4 cup of the oil.)
