Salad Nicoise - cooking recipe

Ingredients
    3 medium potatoes
    3 eggs
    2/3 c. olive oil
    1/4 c. red wine vinegar
    2 tsp. salt
    1/2 tsp. tarragon
    1/8 tsp. pepper
    1 can tuna
    2 medium tomatoes
    1 can French-style green beans
    1 (5 1/2 oz.) jar olives
    2 small heads Boston lettuce
Preparation
    Early in day:
    Cook potatoes and eggs; refrigerate. Forty-five minutes before serving:
    In small bowl, mix well, olive oil, vinegar, salt, tarragon and pepper; set aside.
    Arrange vegetables over lettuce in large platter.
    Spoon dressing over individual salads.
