Blueberry Cake Or Muffins - cooking recipe
Ingredients

1 c. shortening
2 c. sugar
4 eggs
1 tsp. salt
2 tsp. cinnamon
3 c. flour
2 tsp. baking powder
2/3 c. milk
2 c. blueberries, floured well
2 tsp. vanilla
Preparation

Sift dry ingredients (except sugar) together.
Cream sugar and shortening.
Add eggs, one at a time, mixing well after each addition.
Add vanilla to milk.
Add dry ingredients, alternating with milk, to egg mixture.
Mix all well.
Fold in blueberries. Before baking, sprinkle with mixture of cinnamon and sugar (1 tablespoon cinnamon to 2 tablespoons sugar).
Bake for approximately 25 minutes or until tested done.
Yields 2 1/2 to 3 dozen cupcakes or 1 (9 x 13-inch) cake.
