Green Pea Salad - cooking recipe

Ingredients
    1 (1 lb.) pkg. frozen petite peas, thawed
    2 hard-cooked eggs, chopped
    1 c. thinly sliced water chestnuts or jicama
    2 Tbsp. chopped red bell pepper (fresh or mashed) or pimiento
    1/3 c. sliced green onion
    1/2 c. sliced celery
    1/3 c. mayonnaise
    2 Tbsp. Dijon mustard
    1/4 tsp. pepper
    salt
    lettuce leaves
Preparation
    Pour peas into bowl; add egg, water chestnuts, red pepper, onion, celery, mayonnaise, mustard and pepper.
    Blend.
    Salt to taste.
    Cover and chill 8 to 24 hours.
    To serve, spoon into lettuce leaves on platter or individual plates.
    Serves 4 to 6.
