Chicken-Andouille Gumbo - cooking recipe

Ingredients
    2 large fryers (about 3 lb. each)
    1 lb. andouille sausage, sliced or diced
    6 large onions, chopped fine
    1 large bell pepper, chopped fine
    1 bunch shallots, chopped
    1 Tbsp. minced garlic
    1 Tbsp. chopped parsley or parsley flakes
    1/2 tsp. black pepper (use 1/4 tsp. cayenne if you like it hot)
    1 1/2 c. oil, preferably bacon drippings
    1 1/2 c. flour
    1 can cream of chicken soup
    1 can golden mushroom soup
    8 oz. mushrooms (bits and pieces will do)
    salt to taste
Preparation
    Boil chicken to reduce grease.
    Remove the skin and debone if you desire.
