Eggplant Casserole - cooking recipe
Ingredients

1 medium eggplant
1 medium onion, diced
2 eggs
2 slices wheat bread, broken in pieces
3/4 c. grated low-fat cheese
1 c. 2% milk
1 c. mushrooms, sliced
salt and pepper
1 to 2 cloves garlic
Preparation

Cook peeled and diced eggplant in boiling salted water for 15 minutes.
Drain well.
Beat eggs until fluffy, add milk and then soak bread in broken pieces in milk and egg mixture.
Add onions, cheese, mushrooms, salt and pepper (to taste).
Mix well.
Add drained eggplant to this mixture.
Mix well.
Bake at 375\u00b0 for 30 to 35 minutes.
