Shrimp And Grits(Delicious) - cooking recipe

Ingredients
    1 c. hominy grits
    1 tsp. salt
    1 tsp. butter
    1/2 c. grated Cheddar cheese
    1/4 tsp. nutmeg
    1/2 tsp. white pepper
    1 clove garlic, minced
    3 slices bacon, diced
    1 lb. shrimp, peeled and deveined
    2 c. sliced mushrooms
    1 c. finely sliced scallions
    1 tsp. lemon juice
    2 Tbsp. chopped parsley
    salt and black pepper to taste
Preparation
    Cook grits slowly according to directions until only bubble breaks surface now and then, about 40 minutes.
    Stir often; add water if needed.
    Stir in butter and cheese.
    Season to taste with hot pepper sauce, nutmeg and white pepper.
    Cover and hold in a warm place, top of double boiler over simmering water.
    Saute bacon lightly, until edges are brown, not crisp.
