Pumpkin Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
1 c. nuts, finely chopped
powdered sugar
Preparation

Beat eggs on high for 5 minutes.
Stir in sugar and fold in pumpkin.
Add remaining ingredients.
Spread onto a well-greased cookie sheet.
Top with nuts.
Bake at 375\u00b0 for 15 minutes.
Turn out on towel and sprinkle with powdered sugar.
Then roll up and let cool.
Unroll and add filling.
