Pumpkin Muffins - cooking recipe
Ingredients

1 c. boiling water
1/2 c. vegetable oil
2 1/2 tsp. baking soda
1 c. honey
1 c. buttermilk
1 c. cooked mashed fresh pumpkin
2 eggs, slightly beaten
2 1/2 c. all-purpose flour
2 c. Shredded Wheat bran cereal
1 c. regular wheat germ
1 c. raisins
1 c. chopped walnuts
1/2 tsp. salt
Preparation

Combine first 3 ingredients in a large bowl; let cool.
Stir in honey, buttermilk, pumpkin and eggs.
Combine flour and remaining ingredients; make a well in center of mixture.
Add pumpkin mixture, stirring just until dry ingredients are moistened.
Cover and store in refrigerator until ready to bake. (Batter can be refrigerated up to 3 days.)
To bake, spoon batter into greased muffin pans, filling 3/4 full.
Bake at 350\u00b0 for 20 minutes.
