Zucchini Spice Cake - cooking recipe
Ingredients

2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground allspice
1/4 tsp. ground cloves
1/8 tsp. ground ginger
1 1/2 c. vegetable oil
2 c. sugar
4 eggs
3 c. shredded unpeeled zucchini (about 3/4 lb.)
1 1/2 c. finely chopped peanuts
Preparation

Sift dry ingredients together and set aside.
In mixer bowl, beat oil, sugar and eggs until light and creamy.
Mix in dry ingredients just until combined, then fold in zucchini.
Turn into 2 greased and floured 9-inch layer cake pans.
