Houston Restaurant'S Baked Potato Soup - cooking recipe

Ingredients
    3 medium baking potatoes
    1 stick butter
    1/2 qt. light cream or half and half
    1 c. cheddar cheese, shredded
    2 cups sour cream
    1/2 c. green onions, diced
    salt and pepper to taste
Preparation
    Bake potatoes until done; peel and chop into large chunks. Melt butter in large pan.
    Over low heat, slowly stir in cheese and sour cream until melted and well combined.
    Add potatoes, green onions, salt and pepper.
    Simmer for approximately 10 minutes.
    Remove from heat and refrigerate overnight.
    On day of serving, heat soup until hot.
    Pour into soup mugs and sprinkle bacon bits or crisply fried bacon (crumbled) on top.
