Lynne'S Confetti Rice - cooking recipe

Ingredients
    1/2 c. butter
    1 c. celery, finely chopped
    1 c. onion, finely chopped
    1 bell pepper, finely chopped
    3 (10 3/4 oz.) cans chicken broth
    1 1/2 c. white rice
    1/4 c. dried parsley
Preparation
    Preheat oven to 350\u00b0.
    Melt butter.
    Saute celery, onion and bell pepper for 5 minutes.
    Do not brown.
    Pour broth into a 2-quart baking dish.
    Add rice and stir for 3 minutes.
    Add sauteed vegetables and cover dish.
    Bake for 45 minutes and remove from oven.
    Toss rice with parsley.
    Based on 6 servings, each serving contains 350 calories, 18 grams fat, 665 milligrams sodium and 41 milligrams cholesterol.
