Strawberry Delight Salad(Diabetic) - cooking recipe

Ingredients
    1 (3 oz.) pkg. sugar-free strawberry gelatin
    3/4 c. chopped fresh strawberries
    1 c. plain low-fat yogurt
    1 tsp. vanilla extract
    sugar substitute to equal 2 tsp. sugar
Preparation
    Prepare gelatin according to package directions.
    Chill until slightly thickened.
    Crush strawberries in blender or by hand. Add to gelatin mixture.
    Add yogurt, vanilla and sugar substitute. Stir mixture until well blended.
    Pour into four individual molds; chill until set.
    Remove from molds and serve
    on lettuce leaves.
    Yield: 4 servings (each serving is 1/2 cup).
    Exchange for 1 fruit.
