Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    2 Tbsp. butter or margarine
    1 egg
    1 chopped onion
    1/2 c. grated cheese
    1 c. milk
    1 c. bread crumbs or crushed saltines
    salt and pepper to taste
Preparation
    Peel and
    cut
    eggplant
    in
    chunks; boil until tender. Drain and
    mash
    with
    butter.
    Add
    slightly
    beaten
    egg and onion, grated
    cheese, milk and seasonings.
    Mix well and bake for 30 to 40 minutes at 350\u00b0 or until firm and lightly browned on top.
