Coconut Cream Pie - cooking recipe
Ingredients

1 c. sugar
1/3 c. all-purpose flour
1/4 tsp. salt
1 (5 oz.) can evaporated milk
2 1/4 c. milk
3 eggs, separated
2 Tbsp. butter or margarine
1 tsp. vanilla extract
1 (3 1/2 oz.) can flaked coconut
Preparation

Combine first 3 ingredients in a heavy saucepan.
Gradually add milks, stirring until blended.
Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
Beat egg yolks until thick and lemon colored.
Gradually stir about one-fourth of hot mixture into yolks; add to remaining hot mixture, stirring constantly.
Cook over medium heat, continuously stirring, 1 minute.
Remove from heat; stir in butter and next two ingredients.
Spoon mixture into already cooked pastry shell.
Bake at 450\u00b0 for 5 minutes.
Yield:
One 9-inch pie.
