Newburg Sauce - cooking recipe

Ingredients
    1/4 c. butter
    2 Tbsp. cornstarch
    1 tsp. salt
    1 tsp. paprika
    1 dash cayenne
    2 c. light cream or milk
    1/4 c. sherry
    2 egg yolks, beaten
    2 c. lobster, crab or shrimp
Preparation
    Precook lobster, crab or shrimp.
    Separate eggs and beat yolks and add cream to beaten yolks.
    Set aside.
    Melt butter and add dry ingredients, mixing until a smooth texture.
    Add egg yolk and cream mix, stirring constantly until mixture thickens and texture is smooth.
    Add sherry in same manner.
    Add meat.
    Serves approximately 4 to 6.
