Cream Of Spinach Soup - cooking recipe

Ingredients
    3/4 lb. spinach
    4 green onions, sliced
    1 Tbsp. butter, melted
    1 qt. chicken broth, divided
    2 Tbsp. butter
    3 Tbsp. flour
    1 tsp. salt
    1/4 tsp. pepper
    pinch of nutmeg and basil
    1 cup half & half (milk may be substituted)
    croutons to garnish
Preparation
    Clean spinach, drain, set aside.
    Saute onion in 1 Tbsp. oleo.
    Add spinach, no water.
    Cover and cook on high 3-5 minutes. Spoon into blender, add 1 cup broth and process until smooth. Set aside.
    Melt 3 Tbsp. butter, add flour and stir until smooth. Gradually add remaining broth; cook, stirring until slightly thickened.
    Add spinach mixture and seasonings.
    Bring to a boil, cover, reduce heat.
    Simmer 5 minutes.
    Stir in half & half, simmer until heated thoroughly.
    Top with croutons to serve.
