Ingredients

1 c. quick cooking oats (uncooked)
1 c. sugar
2 Tbsp. plus 1 tsp. all-purpose flour
1/4 tsp. salt
1 egg, slightly beaten
1/2 c. butter, melted
2 tsp. vanilla or almond extract
Preparation

Preheat oven to 350\u00b0.
Combine first 4 ingredients; mix well. Stir in remaining ingredients.
Drop by 1/2 teaspoon 3 inches apart on foil-lined cookie sheet.
Bake at 350\u00b0 for 6 to 8 minutes or until edges are browned.
Yields about 6 1/2 dozen.
