Luscious Parsnip Soup - cooking recipe

Ingredients
    4 Tbsp. butter
    1 lb. parsnips, peeled
    1 c. chopped celery
    3 Tbsp. flour
    1/4 c. chopped parsley
    1/8 tsp. white pepper
    4 c. chicken broth
    salt to taste
    Parmesan cheese (optional)
Preparation
    In large, heavy saucepan, melt butter, then stir in parsnips and celery.
    Cover and cook over medium-low heat for 10 minutes, stirring several times.
    Place cooked vegetables in a blender with the flour, parsley and white pepper.
    Add 3 cups of broth and blend at high speed.
    Return to saucepan and whisk in remaining broth.
    Simmer over low heat a few more minutes.
    Salt to taste. At serving time, sprinkle with Parmesan cheese, if desired.
    Makes 4 to 6 servings.
