Lentil Salad - cooking recipe
Ingredients

2 1/2 c. water
3/4 c. dried lentils, rinsed and picked over
1/2 small red onion, chopped
1/2 Tbsp. chopped fresh thyme (less if it's dried)
1/4 tsp. ground allspice
2 Tbsp. red wine vinegar
1/2 Tbsp. Dijon-style mustard
2 1/4 tsp. olive oil
1 celery stalk, chopped
1 carrot, chopped
1/8 c. chopped fresh parsley (less if dried)
1/2 tsp. salt
1/8 tsp. black pepper
1 1/2 Tbsp. brown sugar
3/4 Tbsp. white sugar
1 Tbsp. ground ginger
1/8 tsp. garlic powder
3 Tbsp. soy sauce
1 Tbsp. cider vinegar
Preparation

Place in long shallow dish for one hour turning frequently.
