Crab Meat Casserole - cooking recipe

1/4 c. butter
3 Tbsp. flour
2 c. milk
2 Tbsp. minced onion
1/2 tsp. celery salt
1/4 tsp. grated orange rind
1 Tbsp. chopped parsley
1 Tbsp. minced green pepper
1 tsp. salt
dash of red pepper
1 egg, beaten
1/2 c. fresh bread crumbs
1/2 c. grated sharp cheese
3 c. fresh crab meat or frozen and thawed
4 tomato slices
Preparation

About 1 1/2 hours before serving, melt butter in double boiler.
Stir in flour until smooth, then milk.
Cook, stirring until thickened.
Add onion, orange rind, celery salt, parsley, green pepper, salt and red pepper.
Stir egg mixture into rest of sauce.
Flake crab meat and fold into sauce.
Turn into 1 1/2-quart casserole.
Toss bread crumbs with cheese, then sprinkle around top edge of casserole.
Bake 10 minutes.
Arrange tomato slices down center of casserole.
Bake few minutes longer at 350\u00b0 until crumbs are golden brown.
