Ingredients

3 Tbsp. butter or margarine
1 c. maple sugar
1 c. pineapple chunks
3 eggs, separated
1 c. sugar
1/4 c. milk
1 tsp. lemon extract
1 c. sifted flour
1/2 tsp. salt
1 1/2 tsp. baking powder
Preparation

Melt butter in bottom of 8-inch round cake pan.
Mix in maple sugar.
Arrange pineapple chunks to cover bottom of pan.
Mix beaten egg yolks with sugar; add milk and extract, then dry ingredients, sifted together.
Fold in stiffly beaten egg whites. Pour batter over pineapple.
Bake in moderate oven at 350\u00b0 about 45 minutes.
Invert and serve out in wedges, garnished with whipped cream.
Makes 6 servings.
