Mini Meat Loaf Casserole - cooking recipe

Ingredients
    1 1/2 lb. lean ground beef
    1/2 tsp. salt
    1 egg
    1 (8 oz.) can tomato sauce
    1/2 tsp. Italian seasoning
    1/2 tsp. each: basil and oregano
    bell pepper, parsley and onion (as preferred)
    1 (2.8 oz.) can Durkee French fried onions
    6 or more new red potatoes (skins on), sliced thin
Preparation
    Combine
    meat
    and seasoning, egg, 1/2 can tomato sauce and 1/2
    can French fried onions.
    Place in 9 x 13-inch baking dish. Make into 3 mini loaves.
    Place potatoes around loaves. Bake covered
    at 375\u00b0 for 40 to 45 minutes.
    (You can then add extra vegetables
    if
    you
    care
    to, like corn, red pepper or broccoli.) Stir potatoes;
    add a little salt and pepper.
    Pour tomato
    sauce on (1/2 can) top of mini loaves.
    Bake uncovered 10 minutes; top loaves with other half of French fried onions. Bake for 6 or 7 minutes longer.
