Red Beans And Rice - cooking recipe
Ingredients

1 to 1 1/2 lb. hot smoked sausage, cut into 1/2-inch pieces
1 large onion, chopped
1 small green pepper, chopped (optional)
3 (16 oz.) cans red kidney beans (undrained)
1 1/2 c. catsup
1 clove garlic, crushed
hot cooked rice
Preparation

Cook sausage and onion in a large Dutch oven over medium high heat until sausage is browned and onion is tender.
Add green pepper, if desired.
Add kidney beans, catsup and garlic, stirring well.
Bring to a boil; cover, reduce heat and simmer for 2 hours. Serve over rice.
