Oyster Soup - cooking recipe
Ingredients

2 Tbsp. flour
1 1/2 tsp. salt
1/8 tsp. pepper
2 Tbsp. water
1 pt. oysters and liquid
1 qt. scalded milk
1/4 c. butter
Preparation

Combine flour, salt, pepper and water; blend well to make a smooth paste.
Simmer oysters and the liquid they are packed in until the edges of oysters curl.
Add slowly the paste to oysters, stirring to prevent lumps.
Pour this mixture into the scalded milk and remove from heat.
Cover; let stand for 15 minutes to improve the flavor.
Reheat briefly, adding the butter.
Serve with oyster crackers.
