Dirty Rice - cooking recipe
Ingredients

1 lb. chicken gizzards, chopped fine
1 lb. chicken livers, chopped fine
1/4 c. liquid margarine
1 1/2 c. finely chopped onion
1/2 c. finely chopped celery
1/2 c. finely chopped green pepper
2 garlic cloves, minced
salt and pepper
3 c. hot cooked rice
1/2 c. chopped parsley
Preparation

Brown meat in margarine in a large skillet. Add onion, celery, green pepper, garlic and seasonings.
Mix well.
Cover and cook over medium heat, stirring occasionally, until vegetables are tender.
Add rice and parsley.
Mix lightly. Garnish with parsley, if desired.
Yields 8 servings.
