Scalloped Eggplant - cooking recipe

Ingredients
    1 large peeled eggplant, cut into 1-inch pieces
    5 Tbsp. butter
    4 Tbsp. chopped green pepper
    3 Tbsp. finely chopped onion
    3 c. cooked tomatoes
    1 1/2 tsp. salt
    1/8 tsp. pepper
    1 c. buttered bread crumbs
Preparation
    In a frying pan, cook green pepper and onion in butter
    until tender. Add tomatoes, salt, pepper and eggplant. Cook slowly for 10 minutes. Pour mixture into a greased casserole. Spread bread crumbs evenly on top of casserole. Bake at 350\u00b0 for 25 minutes until eggplant is tender. Serves 6.
