Strawberry Corn Muffins - cooking recipe
Ingredients

2 eggs, beaten
1 c. milk
1 tsp. vanilla
1 1/2 c. all-purpose flour
3/4 c. sugar
3/4 c. cornmeal
1 Tbsp. baking powder
1/2 tsp. salt
3/4 c. fresh strawberries, sliced
1/4 c. butter, melted
Preparation

Combine eggs, milk and vanilla in a small mixing bowl.
Beat thoroughly.
In a separate, larger bowl, combine flour, sugar, cornmeal, baking powder and salt.
Stir egg-milk mixture into dry ingredients along with melted butter until just mixed.
(Do not overmix.)
Batter will be lumpy.
Fold in strawberries.
Pour batter into a 12-cup buttered muffin tin.
Bake in preheated 400\u00b0 oven for 15 minutes.
