Pumpkin Roll - cooking recipe
Ingredients

3 beaten eggs
1 c. sugar
2/3 c. pumpkin (canned)
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. finely chopped pecans
Preparation

Heat oven to 375\u00b0.
Beat eggs and sugar; add pumpkin and lemon juice.
Fold in dry ingredients.
Pour into a 15 1/2 x 10 1/2 x 1-inch jelly roll pan.
Top with pecans.
Bake 15 minutes.
Turn out onto towel sprinkled solidly with powdered sugar.
Roll in towel and cool.
