Maryland Fried Chicken - cooking recipe

Ingredients
    1 young fryer (3 to 3 1/2 lb.)
    1 tsp. salt
    1/2 tsp. paprika
    1 c. water
    1/2 c. flour
    1/2 tsp. pepper
    2/3 c. fat
Preparation
    Quarter chicken, wash and clean. Dry well.
    Dip in mixture of flour, salt, pepper and paprika.
    Place in hot fat in a heavy skillet.
    Brown all sides.
    Allow 15 minutes each side.
    Reduce heat.
    Cover and simmer 15 to 20 minutes.
    Remove from pan.
    Add 2 to 3 tablespoons flour and brown.
    Add 1 cup water.
    Mix well. Place chicken in gravy and simmer another 15 minutes.
    Serve with potatoes or rice, hot biscuits and jelly or honey.
    Serves 6.
