Mexican Chicken - cooking recipe
Ingredients

3 or 4 chicken breasts (bone in with skin)
1/2 c. diced onion
1 can chicken broth
1/4 c. sherry or cooking sherry
3 Tbsp. butter or margarine
1/2 c. stuffed olives or salad olives with pimento
1 or 2 sticks cinnamon
Preparation

Melt butter in skillet.
Rub chicken breasts with garlic. Place in skillet, skin side down.
Brown and turn breast over and add onion and olives, browning other side also.
Add broth and sherry.
Place cinnamon sticks on top; cover skillet and cook for 30 to 40 minutes or until chicken is tender.
Remove cinnamon sticks and serve with cooked rice.
Freezes well.
